Tasks range from the more simple citrus curls and cucumber fans for decorative effect to the more challenging boning out a leg of lamb. But The Complete Book of Knife Skills will soon have you doing both simple and complex cutting chores like an expert.
Selected this based on reviews after my knife sharpener, which never worked very well, broke and I replaced it with a modern sharpener. Suddenly my knives were like-new sharp again - and my guide hand found itself in harm's way. I was giving it nice clean knicks, unlike the jagged nicks from dull knives, but still, after the fourth bandaid, I knew it was time to learn how to cut properly. This book was perfect. I had picked up some of the techniques from random sources previously but found that here they were consolidated and rationalized. There were also new techniques I'd never previously learned. Bell peppers, in particular, were usually the culprits that caused my hand to get nicked, but now I can easily and safely chop them into beautiful equally sized pieces. Many of the meat/fish techniques are beyond what I'm likely to do, but a few simple changes based on this book halved the time it takes me to cut up a whole chicken. The photos and instructions are clear and easy to follow, and my hands are nick-free. I highly recommend this book.
I LOVE this book! As an experienced home cook, I was thrilled to finally get a book that detailed not only cutting techniques, but the different types of knives that are most used in the kitchen. Each technique includes not only detailed instructions, but full color photographs to illustrate each technique as well! The descriptions of both knives and techniques are incredible, and there is even a section that details making decorative food for platters. I can't recommend this highly enough. If you're a beginning or experienced home chef, this is a keeper!
Great resource for learning/brushing up on knife skills. A lot of detailed information about knives in general, as well as a ton of step-by-step guides (with lots of pictures) for performing knife cuts. I don't own or particularly care for this brand of knives, and while the book suggests knives from the brand's product line, it doesn't take anything away from the book's usefulness.
The book is well laid out with a lot of care taken to show step-by-step pictures and instructions for proper technique.The book covers a lot of ground. While I found the overview a good refresher, and need to spend more time relearning how I should be holding my knife, positioning the food and myself, I find it particularly useful for the things I don't do on a daily basis such as filleting fish or carving a ham. The results look better and I'm wasting less food. I expect in the long run it will also save me time as I get used to doing things the "right" way. I find I learned all my knife skills in my mother's kitchen, and so only know how to cut what she cooked. This will make instructions on cutting an artichoke or the whole chapter on shellfish particularly useful. The chapter on creative garnishes seemed only amusing to me, but a visiting friend found it the most intriguing part of the book and planned to replicate an apple swan in the near future.I am on my third copy because friends keep taking mine; the book is that useful.
Though I prefer, and own, an extensive set of Wusthof knives this book is fantastic for someone with limited knife skills. While I may never be able to mince a handful of anything in 5 seconds with an identical dice like the chefs do on TV, this book does show you the proper way to cut a variety of produce, filet fish, and cut and carve meat. I enjoyed learning about the different knives and the comparisons made. I would have liked to have received this book when I was first teaching myself to cook.This would be a beautiful gift as well as a perfect addition to most anyone's cookbook library.
A really easy guide showing all the fancy cuts that make prep work so much easier. I love the format. The instructions are well-designed with small square photos and quick descriptions next to it are just a few short sentences, so learning a specific knife skill is really quick. You look and read for a few seconds and then you feel comfortable jumping in and practicing.

Great step by step to accompany your own learning curve. The photos are very well chosen to mesh with what you see on your cutting board as you move thru each process. I love the book. I am not trying to set speed records or impress anyone with my virtuosity in k ife skills. I just want to use the k ives properly, well, and get the max out of them.
